as Michele Esposito has joined them as the new Chef de Cuisine for Balsamico, the hotel’s fine dining Italian restaurant.

Chef Michele is set to indulge his clients with a new line of authentic Italian dishes created from a blend of his South Italy origins with fresh original ingredients combined with his vast working experience in two Michelin Star restaurants—all this and much more wrapped up in a great Italian atmosphere and authentic Italian fine-dining experience.

To meet his customer’s exceptional standards of taste, Chef Michele has plans to add a twist to his line of original Italian dishes bringing to Balsamico’s new menu, an array of favorites from different regions in Italy—including appetizers such as Octopus (Crispy Octopus, green apple, green beans and basil salad with strawberry coulis) and signature main dishes such as Cod Mousse Ravioli (Ravioli pasta stuffed with Cod mousse, garlic, and chilly, Pecorino cheese sauce)—all finished with a tribute to Middle East desserts that include dates, mint, cardamom, orange and almonds.
